Beef Curry


Serves 4

What you need:
450g/1lb round beefsteak
1 red and green pepper
1 onion
1 cooking apple
1 garlic clove
25g/1oz tomato sauce
15g/½oz chopped nuts(optional)
2 tablespoons hot madras curry powder
2 natural yogurts
1 tablespoon olive oil

What you do:
Cut beef into strips, discarding any fat and grizzle, and boil until tender for approx. 45 minutes. Slice vegetables and apple Crush garlic and cook in oil until tender Strain beef and add to vegetables. Add tomato sauce and curry powder. Stir and finish with yogurt. Simmer for one minute and serve with boiled rice. Chef's note If a sweet curry is preferred, use a fruit yogurt instead of natural.
