Beef Tikka


Serves 4

What you need:
450g/1lb Sirloin beef

Marinade
1 teaspoon ginger, crushed
1 teaspoon ground cumin
3 cloves garlic, crushed
½ teaspoon freshly ground black pepper
1 teaspoon chilli paste
30ml / 2 tablespoons low fat natural yogurt
15ml / 1 tablespoon pure vegetable oil

Tomato and Cucumber Relish:
1 mild onion, chopped
2 ripe tomatoes, peeled, cut coarsely
½ small cucumber, cut coarsely
1 green chilli, sliced, seeds removed
5ml / 1 teaspoon lemon juice

What you do:
Mix all the marinade ingredients into a paste. Cover the meat with the marinade and chill for a few hours. Oven bake the beef for approx. 20 minutes at 200°C/400°F/Gas Mark 6. Combine all the ingredients for the relish in a bowl Serve the tikka on a bed of rice with naan bread and the tomato and cucumber relish.

Chef's Tip:
The meat can also be threaded onto skewers and grilled or barbecued.

Note:
Tomato and Cucumber Relish: This is a traditional Indian relish mainly made from raw vegetables, spices, citrus fruits and some herbs. Mild onion is always an essential ingredient, but after that you can use what other vegetables you wish.
