Serves 4
What you need:
4 skinless chicken fillets
1 yellow pepper, sliced
1 red pepper, sliced
1 green pepper, sliced
1 red onion, sliced
¼ teaspoon crushed chillies
½ teaspoon dried oregano
1 lime, juice and zest
8 tortillas
150ml / 5floz low fat Greek yoghurt
1 tablespoon pure vegetable oil
A little salt and freshly ground black pepper
What you do:
Place chicken, peppers, onion, chilli, oregano, lime zest and juice in large bowl, season and mix well. Add chicken mixture to a hot wok and cook on high heat for 6 – 8 minutes, turning occasionally until lightly charred and cooked through. Warm tortillas in an oven or microwave. Wrap chicken mixture in tortillas, spoon on Greek yoghurt to taste and serve with a garden salad.
