Chicken fajitas – serves 6
A delicious Mexican meal that’s quick and easy to make, very tasty and low in fat – a regular favourite to enjoy casually with a few friends.
What you need:
450g/1 lb chicken breast, thinly sliced
15ml/1 tbsp pure vegetable oil
1 lime, halved
1 packet fajita seasoning mix
1 green pepper, deseeded and sliced
1 red pepper, deseeded and sliced
1 red onion
12 flour tortilla pancakes
125g/4.5 oz low-fat fromage frais
What you do:
Heat the oil in a wok. Add the chicken and stir-fry for about four minutes. Sprinkle with fajita seasoning mix, stir-fry for one minute. Add lime juice and mix in. Add the peppers and onion and cook for a further 3-6 minutes until tender, splashing in a little water if necessary, making sure not to overcook the vegetables. Heat the flour tortillas according to the instructions on the packet. Fill each tortilla with the fajita mixture, 1 tablespoon of salsa and 1 dessertspoon of fromage frais. Roll up tortillas and serve with a green salad.
