Serves 4
What you need:
3 limes, juiced
150ml / 5fl oz Chablis or other dry white wine
4 tablespoons crème de cassis
60g / 21/2 oz icing sugar
2 teaspoons chopped fresh mint
350g/12 oz mixed fruits, such as raspberries, strawberries, blackberries, apples, pears, blueberries
Fruit sorbet, (strawberry, raspberry etc.) for garnish
Fresh mint, to decorate
What you do:
Mix together the lime juice, white wine and cassis. Sift in the sugar and whisk well into lime mixture. Stir in the chopped mint, cover and chill for at least 1 hour. Prepare the fruits, divide them among serving dishes such as small soup plates. Strain the lime mixture and spoon it over the fruit. To shape the sorbet, dip a dessertspoon in hot water, then scrape across the surface of the sorbet, rolling the sorbet into the spoon to make a neat curl. Put the sorbet on top of the fruits, add a sprig of mint and serve.
