Serves 4
What you need:
175g/6oz aduki beans
˝tablespoon sesame oil
˝tablespoon sunflower oil
1 onion chopped
1" fresh ginger finely chopped
1 red chilli
1 red pepper sliced
1 courgette sliced
50g/2oz green beans
3 tablespoons soya sauce
1 tablespoon rice wine vinegar
1 handful dillisk
1 tablespoon miso
Garnish:
Chopped spinish, onion and fresh coriander.
What you do:
Cook beans in boiling water until soft. Heat large pan or wok, ad sesame oil and sunflower oil. When hot add chopped onion, ginger and red chilli and fry for two minutes. Add red pepper, courgette and green beans and fry lightly. Add soya sauce, rice wine vinegar and dillisk and bring to the boil. Add beans and miso. Serve on brown rice and garnish. Chef's Note Dillisk and miso can be purchased usually in any health food shop and some large supermarkets.
