Serves 4
What you need:
4 plums, halved and stoned
3 stalks of lavender or rosemary
35g / 1 ˝oz light brown sugar
1 teaspoon brandy
150g / 5oz low fat natural yoghurt
2 limes, finely zested
1 teaspoon icing sugar
75ml / 4 tablespoons honey, warmed
What you do:
Thread plums onto lavender or rosemary stalks. Cover ends with tinfoil to prevent burning. Sprinkle with brown sugar and brandy and roast in preheated oven 1800C / 350oF / Gas Mark 4 for 15 – 20 minutes. Mix yoghurt, lime zest and icing sugar together. Serve plums warm with natural yoghurt spooned over and drizzled with honey.
