Serves 4
What you need:
350g / 12oz salmon fillet, poached or oven baked
700g / 1 ˝ lb potato, cooked and mashed
1 large red onion, finely chopped
1 lemon, zest only
2 sprigs dill, finely chopped
100g / 4oz wholemeal breadcrumbs
A little salt and freshly ground black pepper
What you do:
Flake the cooked salmon and place in a bowl with potato, onion, lemon zest and dill and mix well. Divide mixture into four and mould into round cake shape. Coat each portion evenly with breadcrumbs. Bake salmon cakes in a preheated oven 190oC/375oF/Gas Mark 5 for approximately 8 minutes or until golden. Serve with a choice of green salad or fresh vegetables.
