Pasta Salad


Serves 4

What you need:
350g/12oz cooked spiral pasta
˝cup garden peas
1 head broccoli, broken into florets
225g/8oz feta cheese, diced
1 green pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced

Dressing
3 cloves garlic crushed
5 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
A little salt and freshly ground black pepper
A few olives to garnish

What you do:
Cook garden peas,refresh in cold water. Blanche broccoli florets and refresh in cold water. Mix pasta, vegetables and cheese and add dressing. Garnish with olives. Chef's note Diced chicken, prawns or tuna can be substituted for fete cheese
