Plaice fillets with bundles of vegetables

Serves 4

What you need:
700g /1-11/2 lbs plaice - skinned, boned
Selection of seasonal vegetables cut into strips
Juice of lemon or lime
Bay leaves
A little salt and freshly ground black pepper

What you do:
Cover and microwave vegetables on highest setting for 2 minutes and allow stand for 1 minute. Season fillets with a little salt and pepper. Arrange vegetable strips on fillet - skinned side. Roll up the fish. Place a bay leaf on each roll. Drizzle lemon /lime juice over the fish. Cover and microwave on highest setting for 3-4 minutes. Allow to stand for 2 minutes. Serve with new potatoes.
