Pork Fillet with Baked Beetroot, Apple & Red Onion


Serves 6

What you need:
2 x 350g/12oz pork fillet, well trimmed of excess fat
2 x 250g/9oz vacuum packed beetroot, cut in segments
3 red onions, cut in segments
3 medium sized cooking apples, cut in segments
Rind and juice of 2 oranges
2 – 3 tablespoons sweet chilli sauce
Fresh coriander, chopped

What you do:
Grill the pork fillets for 3 – 4 minutes on each side and transfer to an ovenproof dish. Toss beetroot, onions and apples with sweet chilli sauce, orange rind and juice and cover the pork fillets. Bake in a pre-heated oven at 200oC/400oF/Gas Mark 6 for approximately 30 minutes. Garnish with fresh coriander and serve.
