Pork with Mango Salsa

Serves 3

What you need:
1 x 350g / 12 oz pork fillet, well trimmed

Marinade
Mix together:
7 ml / 1/2 tablespoon olive oil
15ml / 1 tablespoon hot chilli sauce
7ml / 1/2 tablespoon dry sherry
15ml / 1 tablespoon light soy sauce

Salsa 
Mix together:
1 red pepper, de-seeded and finely diced
1 ripe mango, skinned and diced
3-4 scallions, chopped finely
1 tablespoon hot chilli sauce

What you do:
Spread the marinade mixture over the pork. Leave to marinate for as long as you have time. Combine the salsa ingredients. Heat a pan or barbeque and cook for 8-10 minutes on each side. Alternatively cook in oven for approx 30 minutes at 180°C/350°F/Gas Mark 4. Carve the meat into thin slices and serve with the salsa.

Chef’s Tip:
You could have lots of variation on the salsa – yellow pepper and tomato, avocado and orange, courgettes, tomato and lots of chopped basil.
