Vegetarian Tagliatelle


Serves 4

What you need: 
2 small red onions, thinly sliced in rings
2 cloves garlic, crushed
100g/4oz mixed peppers, sliced
100g/4oz mushrooms, roughly sliced
175g/6oz courgettes, sliced
6 sundried tomatoes, chopped
4 black olives, chopped
1 tablespoon olive oil
1 tablespoon tomato chutney
Juice of 2 oranges
350g/12oz cooked tagliatelle
Dash of Worcestershire sauce
A little salt and freshly ground black pepper
200g/8oz mozzarella cheese(if serving as a main meal)

What you do:
Sauté onions and garlic in hot oil. Add pepper and sauté gently for one minute. Add remaining vegetables and cook until soft. Mix in tomato chutney, orange juice and tagliatelle. Bring back to boil briefly. Season with a little salt, black pepper and Worcestershire sauce. Serve immediately sprinkled with olives. Chef's Note If serving as a main meal, sprinkle mozzarella cheese on each portion.
